Serves 2
Ingredients:
1 1/2 cups of pasta, whatever you prefer
2 ripe tomatoes, diced
1 clove of garlic, finely sliced
75g of good gorgonzola cheese, crumbled
2 tbs finely chopped chives
extra virgin olive oil
himalayan salt & pepper
Bring a saucepan of water to the boil, add a pinch of salt and toss pasta in once it is boiling. Cook until al dente. Meanwhile, heat 2 tsp of olive oil in a pan, add tomatoes and garlic and cook for 2 minutes. Add cooked pasta to the pan, turn down onto low heat and add crumbled gorgonzola. Stir the cheese through the pasta until it has melted then add the chives, a pinch of salt and a little freshly cracked black pepper. Bon Appetit!
